What makes pancakes and flapjacks different  

Sort of all the same stuff.  

Made from pouring batter onto a skillet and subsequently turning it such that all sides are cooked, a pancake is a thin, flat cake.  

Mostly in the south, this nation as well as Canada will occasionally hear flapjacks for pancakes.  

Historians claim flap results from flipping or tossing and Jack was an old slang name for something little.  

Some food companies brand their products using the name hotcakes rather regularly. McDonald's substitutes hotcakes for Pancakes.  

Starting as a marketing word, it still refers to something selling like hotcakes!  

Another word for pancakes is griddle cakes since we make them on a griddle.  

Then you have Scottish pancakes, which resemble what we would term as thin crepes.

Asking for pancakes will get you pancakes while in Great Britain; asking for flapjacks will you something like a granola bar.
