1 (one pound) sweet potato with skin ½ Cup softened butter One cup whitesugar ½ cup milky drink
Two giant eggs ½ teaspoon ground nutmeg ½ Ground cinnamon teaspoon One teaspoon Vanilla Extract 1 (9 inch) unbaked pie crust
In a pot, place whole sweet potatoes; cover with water; come to boil. Cook, 40 to 50 minutes, until soft when fork tested.
Turn on the oven to 350 degrees F (175 degrees C). Pull sweet potatoes from the pot and run under cool water. Eliminate and toss skin. Separate sweet potato flesh and arrange in a bowl. Add butter and, using an electric mixer, thoroughly mix until blended.
Add sugar, milk, eggs, nutmeg, cinnamon, vanilla; beat on medium speed until mixture is smooth.
Into unbaked pie crust, pour filling.
Bake in the preheated oven until, 55 to 60 minutes, a knife put in the center comes out clean. Out of the oven, let cool before serving.
