First: Get ready the batter. Whisk the flour, baking powder, baking soda, salt, and sugar one basin. Combine the eggs and buttermilk in still another bowl. Melt the butter; set aside.
Second step is cooking the pancakes. Set a griddle or cast iron pan over medium heat. Add the melted butter after gently mixing the wet and dry components. Keep from overmixing; lumps are good.
Either bacon fat or butter will help you brush the griddle. Spoon on the batter. Once top bubbles develop, look at the bottom for color. When golden, flip; cook for another minute or more.
Step 3: Serve Hot If you're feeling sophisticated, stack them high, butter, drizzle with maple syrup, and top with blueberry compote.
