"Mississippi Mud Potatoes" Is My Family's All-Time Favorite Side

This cheesy, creamy, and bacon-loaded potato casserole is the ultimate comfort food and a guaranteed crowd-pleaser!

Ingredients:  – 4 cups diced potatoes (peeled and cut into small cubes) – 1 cup sour cream – 1/2 cup butter (melted) – 2 cups shredded cheddar cheese – 

– 1 cup cooked bacon (crumbled) – 1/2 teaspoon garlic powder – 1/2 teaspoon onion powder – 1/2 teaspoon salt – 1/2 teaspoon black pepper – 1/4 cup green onions (chopped, optional)

Instructions:  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Boil the potatoes in salted water for about 5-7 minutes until slightly tender but not fully cooked. Drain well. 

Mix the ingredients – In a large bowl, combine the potatoes, sour cream, melted butter, shredded cheese, crumbled bacon, garlic powder, onion powder, salt, and pepper. Stir until well coated 

Transfer to baking dish – Spread the potato mixture evenly in the prepared baking dish 

Bake uncovered for 35-40 minutes or until bubbly and golden brown on top. Garnish with green onions (if using) and serve hot!
