Ingredients You'll Want One cup of cottage cheese ½ cup whipped topping or cream.
One cup either fresh or frozen blueberries Two tablespoons maple syrup or honey, optional for sweetening ½ tsp vanilla taste Add some lemon zest (optional; but, it really brightens it).
How I Create That Blueberry Cloud Smooth the cottage cheese. I begin by blending or food processing the cottage cheese. This is what gives it that lovely cloud-like texture; I mix it until it's smooth and creamy, free of lumps.
Add taste and sweetener. If I'm feeling more sweet, I then whisk in the vanilla extract and drizzle of maple syrup or honey.
Fold within the Whipped Cream. Making sure not to collapse the mixture, I softly fold in the whipped cream or topped pastry. Here the magic happens; it becomes so airy and light.
Include the blueberries. I then fold the blueberries, saving some for garnish. If I'm using frozen ones, I let them melt somewhat so they meld into the smoothness.
Chill To let everything set and the flavors to meld, I prefer to place the bowl in the refrigerator for 15 to 20 minutes.
Serve and Enjoy If I have extra blueberries, top small bowls or parfait glasses with additional blueberries and a bit lemon zest.
