Easy Strawberry Shortcake Cookies Perfect for Picnics

Ingredients You’ll Need One unsalted butter cup, softened One cup of ground sugar one huge egg Two tsp vanilla essence  

Two ½ cup all-purpose flour One teaspoon of baking powder ½ tsp. salt One cup finely cut fresh strawberries  

Making Strawberry Shortcake Cookies Step-by- Step Prepare and Preheat I set the oven to 375°F and parchment paper lines my baking sheets.  

Butter Cream and Sugar I beat softened butter and sugar together till light and fluffy in a big mixing basin. This stage adds that soft, delicate cookie texture.  

Add damp components. I gently and properly blend the egg and vanilla essence.  

Mix Dry Ingredients Whisk the flour, baking powder, and salt in a another basin. Adding the dry ingredients to the butter mixture gradually, I whisk until barely blended.  

Fold within the Strawberries. I softly fold the diced fresh strawberries. If they are particularly juicy, I first pat them dry to prevent too much dough moisture.  

Sort and sprinkle For that bakery-style finish, I delicately sprinkle the tops with granulated sugar after scooping tablespoon-sized bits of dough onto the ready baking sheets.  

Bakes I bake the cookies for 10 to 12 minutes, just until the tops are softly brown and the edges solidify. I let them cool on the baking sheet for a few minutes then move to a wire rack.
