3 tablespoons of all-purpose flour, 1 tablespoon of potato starch, salt and pepper to taste, canola oil for frying.
On a medium grater, peel, wash, and grate the potatoes; then, carefully squeeze them.
To the shredded potatoes add the smashed garlic, finely grated onion, egg, flour.
Season the concoction with salt and pepper. Well mix so the components blend completely.
Spoon little amounts of the potato mixture while heating the oil in a pan. Turn the potato pancakes golden brown on both sides.
To drain extra oil, arrange the fried pancakes on a paper towel-lined platter.
