Cobbler need 1 ½ cups. 1.1 Gluten-free flour or all-purpose 1 tablespoon baking powder. ½ teaspoon ground cinnamon ½ cup sugar
1 teaspoon vanilla extract. ½ teaspoon of kosher salt. 8 tablespoons cold butter. ¾ cup buttermilk 1 cup Fisher pecans, chopped
Pecan Pie Filling: 1 ½ cups corn syrup. 2 tsp vanilla extract and ¼ tsp ground cinnamon. 3 eggs at room temperature and ¾ cup light brown sugar packed.
2 cups Fisher pecans, chopped ⅛ teaspoon ground allspice. ½ teaspoon of kosher salt.
Preheat the oven to 375° F. Butter a 7x10 baking dish (at least 2 ½" high).
In a large bowl, combine all of the Pecan Pie Filling ingredients and pour into the baking dish.
In a separate bowl, combine the Cobbler's dry ingredients. Using a pastry cutter, combine the chilled butter and dry ingredients until pea-sized crumbs appear.
Add the buttermilk and stir until combined. Scoop equal amounts of cobbler dough on top of the pecan pie filling.
Bake for 40-45 minutes, until brown and firm. Remove and enjoy!
